Die Idee für Kefirko wurde Ende 2014 daraus geboren, weil die Kefir Zubereitung von Zuhause aus, ziemlich chaotisch und kompliziert sein kann. Drei Jahre später, 2017 brachte Kefirko ein Produkt für die Käseherstellung auf den Markt. Alle Produkte dienen zur Erleichterung der Herstellung von fermentierten Produkten und gestalten den ganzen Prozess dafür sauberer und effizienter.

Kefir Maker - Milchkefir (milk kefir tuber)

Was ist Milchkefir ? 

 

Die Milchkefirknollen ähneln Blumenkohl , halt nur etwas kleiner. Sie verwandeln Milch (Kuhmilch, Ziegenmilch, Schafsmilch andere tierische Milcharten) circa über Nacht (innerhalb von 24-48 Stunden) in ein aromatisch-cremiges, Joghurt-ähnliches Kefir-Getränk mit natürlicher Hefe, Milchsäurebakterien und Mineralstoffen. Es gibt kaukasischen (sahniger, nicht so sauer) und tibetischen (säuerlicher). Man nennt es auch das "Getränk der Hundertjährigen".

 

Enthalten sind: Mikroorganismen

  • Milchsäurebakterien, Hefen, Essigsäurebakterien.
  • Gärungsprodukte: Milchsäure, Kohlensäure, Kohlendioxid, Ethanol (Alkohol)
  • Nährstoffe: Polysaccharide (Mehrfachzucker)
  • Vitamine oder Vitaminvorstufen: Vitamin A, Vitamin B1, Vitamin B2, Vitamin B6, Vitamin B12, Vitamin D, Folsäure, Niacin. 

Warum ist der Milchkefir so gesund ?

  • enthält wertvolle Inhaltsstoffe (siehe oben)
  • gehört zu den probiotischen Lebensmitteln (Milchsäurebakterien)
  • er hat eine antibakterielle Eigenschaft (Probiotika Lactobacillus kefiri und das Kohlenhydrat Kefiran)
  • gut für die Knochen (Calcium und Vitamin K2) 
  • kann vor Krebs schützen
  • gut bei Darmproblemen/Verdauung (Probiotika baut Darmflora auf)
  • kann bei Allergien helfen
  • ist gut verträglich

 

What is milk kefir?

 

The milk kefir tubers resemble cauliflower, just a little smaller. They transform milk (cow's milk, goat's milk, other animal milk types) into an aromatic-creamy, yoghurt-like kefir drink with natural yeast, lactic acid bacteria and minerals overnight (within 24-48 hours). There are Caucasian (creamy, not so sour) and Tibetan (sour). It is also called, the "drink of the centenarians".

 

Included are: Microorganisms

  • Lactic acid bacteria, yeasts, acetic acid bacteria.
  • Fermentation Products: Lactic Acid, Carbonic Acid, Carbon Dioxide, Ethanol (Alcohol)
  • Nutrients: polysaccharides (multiple sugars)
  • Vitamins or vitamin precursors: Vitamin A, Vitamin B1, Vitamin B2, Vitamin B6, Vitamin B12, Vitamin D, Folic acid, Niacin.

Die Knollen des Milchkefir sind weiß und wandeln Milch in ein leckeres gesundes Getränk um. Ich habe den Kaukasischen und er schmeckt mir persönlich echt gut !

 

The tubers of the milk kefir are white and convert milk into a delicious healthy drink. I have the Caucasian and he personally tastes really good!

 

Ich habe die Milchkefirknollen mit Ziegenmilch angesetzt, da ich keine Kuhmilch vertrage, weil laktosefreie Milch leider nicht funktioniert.

 

I used the milk kefir tubers with goat's milk, because I do not tolerate cow's milk, because lactose-free milk does not work.

 



Herstellung des Milchkefirs - Production of milk kefir

 

Für 500 ml Milch benötigst man 8 g der Milchkefirknollen. Diese kommen zusammen in ein Gärgefäß (Glas mit Deckel) und bleiben anschließend 1-2 Tage bei Zimmertemperatur stehen (je nach Geschmack und Raumtemperatur). Dabei wird die Milch zu einem Kefirgetränk umgewandelt und hat seine Vitamine & Mineralstoffe an die Milch abgegeben.

 

Anschließend werden die Milchkefirknollen vom Kefirgetränk mit Hilfe eines Siebes getrennt. Die Kefirknollen müssen immer gut abgewaschen werden und können danach neu angesetzt werden oder man gönnt ihnen eine Pause im Kühlschrank.

 

Das fertige Kefirgetränk kann man pur trinken, im Kühlschrank aufbewahren oder zu einem Smoothie verarbeiten, sowie zum Backen und Kochen verwenden.

 

Smoothie Rezept (wird sehr cremig)

  • 200 ml Kefirgetränk 
  • eine Handvoll Heidelbeeren
  • etwas Zucker oder Xylit oder andere Süßungsmittel, wie Sirup oder Honig

For 500 ml of milk you need 8 g of milk kefir tubers. These come together in a fermentation vessel and then stay for 1-2 days at room temperature. The milk is converted into a kefir drink and has given off its vitamins and minerals to the milk.

 

Then the milk kefir tubers from the kefir drink, separated with the help of a sieve. The kefir tubers then have to be washed off well and can then be re-started or you can take a break in the fridge.

 

The finished kefir drink can be drunk neatly, kept in the refrigerator or processed into a smoothie, and used for baking and cooking.

 

Smoothie recipe

  • 200 ml of kefir drink
  • a handful of blueberries
  • some sugar or xylitol or other sweeteners, such as syrup or honey

Milchkefir - Dinkelpfannkuchen - Milk kefir - spelled pancakes

Zutaten

  • 500 ml Kefir
  • 200 Wasser
  • 4 Eier
  • 1 Pck. Backpulver
  • 1 Spritzer Zitronensaft
  • etwas Salz
  • 1 Prise Zucker oder Xylit, Sirup - Honig
  • 1 TL Rapsöl
  • 250 g Mehl
  • Außerdem: Rapsöl und Butterflocken  zum Ausbacken

 

Ingredients

  • 500 ml of kefir
  • 200 water
  • 4 eggs
  • 1 pck of baking soda
  • 1 dash of lemon juice
  • a bit of salt
  • 1 pinch of sugar or xylitol, syrup - honey
  • 1 teaspoon rapeseed oil
  • 250 g flour
  • Rape oil and butter flakes for baking

 

Zubereitung

 

Alle Zutaten zu einem glatten Teig, mit Hilfe eines Rührgerätes vermischen. Anschließend 1 Stunde bei Zimmertemperatur stehen lassen und nun in einer leicht eingefetteten Pfanne ausbacken. GUTEN APPETIT !

 

 

Preparation

 

Mix all ingredients to a smooth dough, using a stirrer. Then leave for 1 hour at room temperature and then bake in a lightly greased pan. GOOD APPETITE !

 



Käsezubereitung - Cheese Maker

 

Um den Milchkefir zu einem Käse weiterzuverarbeiten, benötigt man ein Gefäß (Glas) mit einem Siebeinsatz (wie z.B. den Kefirko Cheese Maker). Da hinein füllt man den fertigen Kefir ohne die Knollen und lässt die überschüssige Lake bei niedriger Temperatur im Kühlschrank ablaufen. Nach einigen Tagen hat man dann einen weichen Frischkäse oder wartet noch ein wenig länger und erhält dann einen etwas festeren Frischkäse. 

 

To process the milk kefir into a cheese, one needs a jar (glass) with a sieve insert (such as the Kefirko Cheese Maker). In it you fill the finished kefir without the tubers and let the excess brine run off at low temperature in the fridge. After a few days you have a soft cream cheese or you wait a little longer and then get a little firmer cream cheese.

 

 

Beim Kefir Cheese Maker von Kefirko befindet sich eine Spirale im Lieferumfang. Damit drückt man den Frischkäse im Sieb zusammen, so dass noch mehr Lake heraus läuft und der Käse fester wird. Im Kefir Cheese Maker könnt Ihr natürlich auch anderen Käse herstellen.

Der fertige Frischkäse - the finished cheese

 

Der Frischkäse ist sehr sahnig, hat wenig Säure am Anfang und schmeckt gar nicht nach Ziegenmilch. Wenn man den Frischkäse innerhalb von ein paar Tagen isst, bleibt der Geschmack unverändert, aber danach entwickelt er einen leichten säuerlichen Geschmack, denn die hilfreichen Bakterien verarbeiten den Frischkäse weiter - schmeckt aber nicht unangenehm !

 

The cream cheese is very creamy, has little acid at the beginning and does not taste like goat's milk. If you eat the cream cheese is within a few days, the taste remains unchanged, but then it develops a slightly sour taste, because the helpful bacteria continue to process the cream cheese - but does not taste unpleasant!

 


Fazit - draw a conclusion

Ich liebe es meine Lebensmittel selber zumachen, weil Ihr kennt mein Motto, dann weiß ich was drin ist. Aber trotzdem gebe ich zu, dass ich doch das eine oder andere noch kaufe - möchte aber versuchen, noch mehr selber zumachen, weil das für meinen Darm wichtig ist !

 

Die beiden Maker von Kefirko finde ich richtig gut und man kann sie nicht nur für den Milchkefir verwenden, sondern auch für den Wasserkefir und dem Kombucha, sowie wildes Fermentieren und unterschiedliche Käse selber machen. Es gibt im Rezeptheft tolle Rezepte, aber man findet auch im Internet zahlreiche leckere Rezepte dafür.

 

Nach mehreren Tests kann ich gern 4,5 von 5 Sterne dafür geben und werde mir wahrscheinlich noch ein drittes kleineres Glas von Kefirko kaufen. Erwerben kannst Du die Produkte direkt bei Kefirko oder anderen Online Händlern (z.B. amazon) - ab 18 Euro - 35 Euro (kommt immer darauf an, was für ein Maker man möchte und dessen Größe ).

After several tests, I would like to give 4.5 out of 5 stars and will probably buy a third smaller glass from Kefirko - I can only recommend the products! You can buy the products directly from Kefirko or other online retailers (for example Amazon) - from 18 Euro - 35 Euro (depends on what kind of maker you want and the size of it).
